Pumpkin Tacos I know it sounds a little strange, but our vegetarian friends are gonna love it. 2 Tbsp vegetable oil 2 cups cubed fresh pumpkin 1/4 cup vegetable stock 1 Tbsp ground cumin 1 tsp salt 1 tsp black pepper 1 tsp cayenne pepper or paprika 1/4 tsp cinnamon 1/4 cup diced fresh tomato 1/4 cup diced onion 1 whole avocado diced small 3 Tbsp fresh cilantro Heat the oil in a large skillet and cook pumpkin 2-3 minutes. Stir in vegetable stock, cumin, salt, pepper, cayenne/paprika, and cinnamon. Cook until pumpkin cubes are tender (5-7 minutes). Fill warm tortillas with pumpkin and top with tomato, onion, avocado, and cilantro.
