Fresh Watermelon Salsa This is a great Summer salsa that will surprise you. 3 cups fresh watermelon, diced medium 1/2 cup red onion, diced small 1/2 cup sweet red pepper, diced medium 1 teaspoon jalapeno pepper, minced 2 tablespoons fresh cilantro, chopped 1 tablespoon fresh lime juice 2 tablespoons olive oil Salt and pepper to taste Combine all ingredients and refrigerate for 2 hours. Serve cold or slightly warm with your favorite seafood or chicken. Yield: 4-6 servings.
